Diabetes T2 and big pink icing apple buns.

You can't fool diabetes t2. I remember one day boy! Did I feel like a pink icing apple bun, and a really big one. I thought I was ok as I gave the pink icing to my friend. It didn't take too long before I felt like a slug - I felt so sick and I was scared of what was happening to me. It took 2 days to get over that episode because I was still learning how to manage my diabetes! Since then I admire those buns from a distance! Don't be afraid to say no when friends ask you for coffee and always have something sweet to go with it - it's ok to say "I'm managing diabetes, thank you for your kindness but I'll be happy with just a coffee today". People are beginning to understand a whole lot more about diabetes these days.

And of course, you can have that bun, just watch those glucose levels afterwards.

Recipe for making diabetic friendly pink icing apple buns at home:

Ingredients:

For the Apple Filling:

  • 2 medium apples, peeled, cored, and finely chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1 tablespoon low-calorie sweetener (such as stevia or erythritol)
  • 1/4 cup water

For the Buns:

  • 2 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup unsweetened applesauce
  • 1/4 cup plain Greek yogurt
  • 1/4 cup low-fat milk
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • 1/4 cup low-calorie sweetener
  • 1 large egg

For the Pink Icing:

  • 1/4 cup powdered erythritol or stevia
  • 1-2 tablespoons milk (adjust for desired consistency)
  • A few drops of natural pink food coloring (optional)

Instructions:

  1. Prepare the Apple Filling:

    • In a saucepan, combine the chopped apples, lemon juice, cinnamon, low-calorie sweetener, and water.
    • Cook over medium heat until the apples are softened and the mixture thickens, about 8-10 minutes.
    • Remove from heat and let the apple filling cool.
  2. Prepare the Buns:

    • Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
    • In a mixing bowl, whisk together the whole wheat flour, baking powder, baking soda, and salt.
    • In another bowl, combine the applesauce, Greek yogurt, milk, vegetable oil, vanilla extract, low-calorie sweetener, and egg. Mix well.
    • Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
    • Spoon the batter evenly into the prepared muffin tin, filling each cup about halfway.
    • Add a spoonful of the cooled apple filling on top of the batter in each cup.
    • Cover the apple filling with a little more batter, filling each cup nearly to the top.
    • Bake for 15-20 minutes or until a toothpick inserted into the center of a bun comes out clean.
    • Remove the buns from the oven and let them cool on a wire rack.
  3. Prepare the Pink Icing:

    • In a small bowl, whisk together the powdered erythritol or stevia and milk until smooth. Adjust the milk quantity for desired icing consistency.
    • If using, add a few drops of natural pink food coloring to achieve the desired pink color.
  4. Ice the Buns:

    • Once the buns are completely cool, drizzle or spread the pink icing over the tops.
    • Allow the icing to set before serving.
